They all sound delicious, I think it's ok to include fish. To be honest I'm not sure if "meat free Mondays" has any "rules". Thanks for your contributions.

I have a few, since I had to introduce more low fat meals permanently for health reasons. Also my husband loves fish:

Vegetable Curry
Vegetable Lasagne
Saag Aloo (excellent packet mix available)
Tuna Pasta Bake
Roasted Vegetables
Baked Cod with corn
Salmon with Puy Lentil Salsa
Tuna Pasta Bake
Salmon with vegetables & noodles
Vegetable Stir Fry
Numerous casseroles (e.g mixed bean) and soups which you can make in a slow cooker.
Spicy vegetable pie - (I don't make this so often now because of the pastry).

Is it cheating to include the fish ones?
